  1. Put milk, butter, orange rind and sugar into a small saucepan over a medium heat. Heat until butter has melted and small bubbles form around the edge of the saucepan. Remove from heat, add salt and cool slightly.
  2. Whisk yeast, hot water and extra sugar in jug. Set aside in a warm place for 10 minutes or until frothy. Whisk egg and egg yolk in a small bowl. Sift flour and cardamom into a large bowl. Add milk mixture, yeast mixture and eggs.
  3. Stir until soft dough forms. Turn onto a lightly floured surface and knead for 10 minutes or until elastic.
  4. Put into a lightly oiled bowl.
  5. Cover with plastic wrap and stand in a warm place for 45 minutes or until doubled in size.
