  1. Empty lime crystals into a measuring jug. Add boiling water and stir until well dissolved.
  2. Transfer ¼ cup of the dissolved jelly mixture into a small bowl. Add Malibu and set aside.
  3. Cool remaining jelly mixture until just warm. Stir in lime rind and juice and coconut milk.
  4. Divide evenly between 4 serving glasses and refrigerate until set.
  5. When firm, pour reserved lime and Malibu jelly mixture over the set coconut jelly. Return to fridge to set.
  6. To serve, top with slices of mango, coconut and mint.
