- 85 grams Lime Jelly Crystals
- 1 cup Boiling Water
- ¼ cup Malibu Liqueur
- 1 Lime finely Grated Rind and Juice
- 270 ml Coconut Milk
- 1 Mango
- Coconut Toasted Shredded

Instructions
- Empty lime crystals into a measuring jug. Add boiling water and stir until well dissolved.
- Transfer ¼ cup of the dissolved jelly mixture into a small bowl. Add Malibu and set aside.
- Cool remaining jelly mixture until just warm. Stir in lime rind and juice and coconut milk.
- Divide evenly between 4 serving glasses and refrigerate until set.
- When firm, pour reserved lime and Malibu jelly mixture over the set coconut jelly. Return to fridge to set.
- To serve, top with slices of mango, coconut and mint.
