- 1/2 cup Sugar
- 60 grams Ginger grated
- 100 ml Lime Juice
- 300 ml Gin
- 600 ml Soda Water
- 3 Lime sliced

Instructions
- Combine sugar, water and ginger and stir over low heat to make a syrup.
- Simmer until reduced by half.
- Cool in the fridge.
- Add the gin, ginger syrup and lime juice into a jug and stir.
- Add 50 mls into glasses and top with soda water. Garnish with sliced limes.
