  1. Preheat oven to 180c. Place ½ cup caster sugar and 1 tablespoon lemon rind in a bowl and mix to combine. Set aside.
  2. Place the butter and remaining sugar in a bowl of an electric mixer and beat for 4-5 minutes or until light and fluffy. Add the egg and lemon juice and beat for a further minute.
  3. Add the flour, baking powder, remaining lemon rind and poppy seeds and mix until just combined.
  4. Roll tablespoonfuls of the mixture into bowls and roll in the lemon sugar.
  5. Place on baking trays lined with non-stick baking paper, allowing room to spread and flatten slightly.
  6. Bake for 12/14 minutes or until golden. Allow to cool completely on trays.
  7. Sprinkle with the reserved lemon sugar to serve.
