Ingredients
- 1 ½ cups Caster Sugar
- 2 tablespoon Lemon Rind finely grated
- 225 grams Butter softed
- 1 Egg
- 1 tablespoon Lemon Juice
- 2 cups Plain Flour sifted
- 1 teaspoon Baking Powder
- 1 tablespoon Poppy Seeds

Instructions
- Preheat oven to 180c. Place ½ cup caster sugar and 1 tablespoon lemon rind in a bowl and mix to combine. Set aside.
- Place the butter and remaining sugar in a bowl of an electric mixer and beat for 4-5 minutes or until light and fluffy. Add the egg and lemon juice and beat for a further minute.
- Add the flour, baking powder, remaining lemon rind and poppy seeds and mix until just combined.
- Roll tablespoonfuls of the mixture into bowls and roll in the lemon sugar.
- Place on baking trays lined with non-stick baking paper, allowing room to spread and flatten slightly.
- Bake for 12/14 minutes or until golden. Allow to cool completely on trays.
- Sprinkle with the reserved lemon sugar to serve.
