Ingredients
- 1 Onion chopped
- 1 Carrot chopped
- 1 Stalk Celery chopped
- 1 Garlic Cloves crushed
- 1 Spanish Style Chorizo sliced
- 700 grams Tomato Passatta Sauce
- 4 cups Water
- 2 Zucchini chopped
- 1/2 cup Macaroni
- 1 can Cannellini Beans
- Parsley chopped
- Parmesan Cheese grated

Instructions
- Cook onion, carrot, celery and garlic in olive oil over medium heat for 5 minutes until soft.
- Slice chorizo, add to pan and cook until crisp.
- Stir in tomato sauce and 4 cups of water. Bring to the boil; add zucchini, macaroni and beans.
- Simmer for 10 minutes until macaroni is tender. Add chopped parsley and season to taste.
- Ladle into bowls. Drizzle with oil and top with parmesan cheese.
