Instructions
  1. Use microplane to zest lemons.
  2. Whisk zest and sugar together in jug with beater.
  3. Slowly add lemon juice, whisk until well combined.
  4. Add all cubes of butter.
  5. Microwave on 800 watts for 6 minutes, stopping each minute to whisk.
  6. Curd is done when thickened and coats back of a spoon.
  7. Once cooled. Store in snack cups or any other liquid tight container.
