I went into the office for the first time in a few months today. I’ve been working from home with the company for nearly 2 years now and it is amazing. I usually try and get into the office once a month but being winter flu season kicked in and was better to stay away and avoid.
Well, i can’t just go in without something baked fresh, so i made a cake. This cake is so easy, and so delicious. Simple 2 Ingredient Cake with Cream Cheese Frosting.
So, first up the cake. Using 425g of canned fruit, i used the last of my parents poached peaches including the juice. Then added one packet of butter cake mix, Coles Homebrand packet, and mixed these two together until combined.
I have poured this into a metal cake tin lined with baking paper. Baked this in a 200 degrees C oven with the fan on for 40 minutes until a skewer inserted comes out clean. This cake will “deflate” a little, do not panic.
Whilst the cake is in the oven i have made the frosting, using cream cheese, butter, vanilla essence and 1/2 cup icing sugar. I have whipped these up in my Tupperware Extra Chef, you can use any beater or even by hand. I have whipped this up until smooth and set aside until the cake is ready.
Once the cake is out of the oven and has cooled i have smeared the frosting over the top of the cake and then set in the oven for the night to chill.
