So a weekend full of cheesecake, chicken pies, more cheesecake and spaghetti with pumpkin sauce.

First.

No Bake Cheesecake.

For the base i used two cups of mixed cookie crumbs and three tablespoons of melted butter. I have then pressed this into a pan and placed this into the fridge until the filling is ready.

For the filling i have combined the filling ingredients in the mixer and left this mix for at least 4 minutes. In this cheesecake i have used lime juice.

 

Second.

Little Chicken Pies.

Using chicken breast, carrots, peas, onion and rosemary plus all the rest of the ingredients.

I have only left out the bacon with these. I have not had any cream remaining at this stage so i have just used milk.

I have used my pie maker and shortcrust pastry and puff pastry. I have ended up making 17 pies.

When ready to serve these up, i have placed them into an oven to heat through. The oven was at 200c and i heated these up for 10 minutes.

Served these with chips and they were delicious.

Third.

Cheesecake…. again?

Now above i have mentioned that i have made cheesecake twice. This is true i made the same cheesecake twice;.

Reason? I was convinced to eat the first cheesecake for dessert on Saturday rather than take the first to work. Funny thing was it wasn’t quite ready and when we cut this to serve it has became ice-cream but very tasty. This was served with strawberries.

For the second cheesecake the only difference was i used lemon juice instead.

Fourth.

Spaghetti with Creamy Butternut, Leek and Parmesan Sauce.

This was a new recipe i found today and to make it better we had a butternut pumpkin to use up.

Boiled the pumpkin then took them out once soft and mashed then and set aside. Into the water that the pumpkin came from i have added the fettuccine and brought back to the boil.

Whilst this was boiling i have sauted the leek and garlic in the butter and have then added 6 slices of shortcut bacon and let this saute for 6 minutes.

Added the pumpkin, parmesan, sage, salt and pepper and 2/3 cup of the pasta water to make it more saucy.

I have let this simmer until the fettuccine has cooked.

Stirred the fettuccine through the sauce and placed in bowls with a little extra parmesan cheese.

This meal was delicious!
