A full day of baking today, getting ready for Christmas and also just to use up some stuff in the freezer and cupboards.
First, Raspberry and White Chocolate Muffins.
I have combined the plain flour, baking powder and the caster sugar in a bowl.
Then i have used 300ml of flavoured yoghurt, 1 egg, lemon rind and vegetable oil in another bowl and combined. I have then added this mix to the flour mixture and folded together.
I have then carefully mixed the raspberries and white chocolate. The mixture has then been spooned into five mini muffin tins and have cooked these for 30 minutes until lightly browned.
I have made 52 muffins.
Next, Mini Christmas Truffles.
I have made two batches of this mixture.
So using, 820g of fruit cake, crumbled, 2 tablespoons Moscato, 2 tablespoons of coffee powder, 2 tablespoons water, 80g of marmalade and 80g butter.
I have rolled these into small bite-sized balls placed on a tray lined with baking paper and the placed these into the fridge to cool down and set.
About 3 hours later i have melted 400g of milk chocolate bits and have then dipped each ball into the chocolate to coat.
Finally i have melted 200g of white chocolate and then placed a small amount on top of each.
I have made 43 Puddings.
Next, Shortbread.
For this i have creamed the butter, sugar and vanilla. I have then added the plain flour and the rice flour and mixed until combined.
I have then dived the mixture into two portions.
With the first portion i have left it classic and i have divided the portion into three and wrapped each in glad wrap and placed into the fridge.
With the second portion i have added chopped glace cherries and almonds to the mixture and combined until mixed through. I have then divided this portion into three and wrapped into glad wrap and placed in the fridge.
These i will finish baking on Tuesday.
Finally for today. Sausage Rolls.
With this never a recipe as it changes every time.
I have combined sausage mince, three spring onions, 1 grated carrot and the grated stem of a broccoli. Added some herbs and then spread evenly on two and a half pieces of puff pastry.
I have then rolled these up and cut into five and cooked until golden brown.
