Ingredients
- 350 grams Spiral Pasta
- 2 cups Pumpkin chopped, 280g
- 1 tablespoon Oil
- 1 Onion chopped, 80g
- 2 cloves Garlic Cloves crushed
- 1 can Light and Creamy Evaporated Milk
- 1 tablespoon Cornflour
- 2 cups Broccoli 160g
- ½ cup Cheddar Cheese reduced fat grated 60g
- ½ cup Cashew Nuts toasted, 75g

Instructions
- Place pumpkin in boiling water, simmer 1 minute; drain.
- Heat oil in a frying pan over medium heat, add onion, garlic and pumpkin, cook stirring 2 minutes.
- Blend 2 tablespoons cooking milk and cornflour; add to pan with remaining milk and broccoli, bring to boil, stirring constantly, simmer 1 minute. add pasta, cook just until heated through; remove from heat, stir in cheese and sprinkle with cashews.
