I decided to try out the viral Beef Doner Mix, however i didn’t have yoghurt in the fridge, so with the help of Chat GPT i have used this recipe, using up some whipped feta dip instead.

Ingredients :

  • 500g beef mince (regular, not extra-lean)

  • ⅓ cup whipped feta (with herbs)

  • ¼ cup milk or water (start with milk if you have it)

  • 1½ tbsp olive oil

Spices & flavour (adjusted for feta)

  • 2 tsp ground cumin

  • 2 tsp paprika (sweet or smoked)

  • 1 tsp ground coriander

  • ½ tsp ground allspice

  • ½ tsp onion powder

  • 2 cloves garlic, very finely minced or grated

  • ½ tsp black pepper

  • 1 tbsp lemon juice (not more — feta is already tangy)

Method :

  1. In a bowl, whisk the whipped feta, milk, olive oil, lemon juice, garlic, and spices until smooth and pourable.

  2. Add beef mince and mix very thoroughly (hands are best) for a good 2–3 minutes. (You want it slightly sticky — this gives that doner “sliceable” texture.)

  3. Cover and refrigerate at least 2 hours, up to 12 hours (don’t go longer with feta + beef).

  4. Shape into a compact loaf or press firmly into a lined loaf tin.

  5. Bake at 180°C (fan) for 35–40 minutes. Finish under the grill for browning.

  6. Rest 10 minutes, then slice thinly.

What to expect

  • Flavour: rich, savoury, slightly herby, more Greek than Turkish

  • Texture: juicy but firm, slices well

  • Salt level: balanced (as long as you skip added salt)

  • Simple garlic sauce (mayo + lemon + garlic — skip extra salt)
