Two amazing meals made over the last two nights.

First, last nights dinner. Chicken and Lemongrass Skewers.

Using 400g Chicken Mince, ginger, garlic, spring onions, green curry paste, breadcrumbs, soy sauce and a egg i have combined them and formed them around slices of fresh lemongrass.

I have then cooked these in a pan with a little coconut oil until golden brown.

I have served these with a quinoa and rice combination.

Second meal. Tonight’s meal. Vegetable Curry.

I have saute’d the red onion in the olive oil. I have then added the carrot, pumpkin and garlic to the pan and cooked for 5 minutes. I have then added 1 cup of peas and 1 cup of beans in lieu of the mushrooms. I have then added the curry powder and the coconut milk and simmered until the vegetables are soft.

I have served this with rice and papadams.

The only thing i would do differently is add something else for a little extra flavour or kick. Maybe some chilli when adding the garlic. Something to think abut next time.
