Now that our little one is able to eat solids I found a recipe for a very yummy risotto. They advised to bake it, but I just did it normally on the stove top. This was delicious. The boy however, said it needed more meat or BACON. Little Miss and I thought otherwise. Recipe is from the Starting Solids Australia page, found this on Instagram, could be found on other sites.

You Need :

1 tablespoon Olive Oil

1 Onion, diced (I used a Red Onion and only half as mine was huge)

1 Carrot, diced (I grated this)

1 cup Mushrooms, finely diced (I did not add this)

1 Zucchini, diced (I grated this)

1 teaspoon dried Thyme

1 teaspoon dried Rosemary

Good crack of Pepper

1 tablespoon Garlic, minced

1.5kg Chicken Thigh, skin on and with the bone in for more flavour if possible. (I used leftover BBQ Chicken, approx 3/4 of one)

1 bag frozen Spinach (I used bag of Baby Spinach, which i have chopped)

1 Lemon, juice and zest

1 1/2 cup Risotto Rice

1 cup Milk (I did not use this)

4-5 cups of Vegetable Stock

Parmesan to Serve

To Make :

Preheat the oven to 160 degrees C (If using the oven to bake this that is)

Heat an oven proof pan on the stove top. Add in your olive oil, onion, carrot, mushrooms, zucchini, herbs and garlic and cook until soft.

Add in your chicken to brown off. Add the rest of your ingredients and mix through.

Add in 3 cups of stock and the milk (or 1 extra up of stock) and stir. Pop on the lid and put in the oven for 45 minutes. Take off the lid add the last cup of stock over the top and cook for another 10-15 minutes to brown a little.

OR if you want to cook on the stove top, just simmer away until the liquid absorbs and the rice cooks.

Serve with Parmesan Cheese on top. Delish.

NOW, i had leftovers and decided to turn this into Arancini Balls.

Using the leftover risotto, approx 4 cups, i have added 1/2 cup cooked diced bacon, 1 egg, 1/2 cup breadcrumbs and 1/4 cup parmesan cheese. I have mixed this up. Using a 1/4 cup scoop, scooped up the rice mix, made a well and added a cherry bocconcini ball and rolled into a ball.

I have then popped these into the fridge to cool. I have then rolled into flour, then into a beaten egg and then into breadcrumbs. I have sprayed with a little olive oil and then placed into the air-frier at 200 degrees C for 10 minutes, flipping after 5 minutes.
