So baking for the RSPCA Cupcake Day took place today.
But first a breakfast was needed first.
So i have placed a piece of shortcut bacon in the bottom of a muffin pan. I have topped this piece of bacon with diced tomatoes, capsicum and spring onions.
Then with grated cheese and then a cracked egg on top.
I have placed these into an 180c oven for 20 minutes. The eggs have cooked enough so the yolks were runny enough and the whites were firm.

With this it just two slices of bread toasted in the grill on one side and then flipped over and spread with butter and sprinkled with parmesan cheese and grilled again.
So the first of the cupcake baking was Banana Cake with Nutella Buttercream.

Substitutes that have been used today.
I did not have any sour cream or buttermilk so i have used yoghurt.
I have run out of hazelnut meal so have have used half a cup of hazelnut meal and half a cup of almond meal.
And thats it. They have come out perfect and have made a batch of 24.
Decorating comes tomorrow.
And the second of the cupcake baking was Peanut Butter Cup Brownies.

The only thing i have substituted was the buttermilk with yoghurt. I have cooked them for 15 minutes and made a well in the centre of each before letting them cool.
Decorating to happen tomorrow as well.
