Dinner tonight, we wanted to make something with rice to serve with the chicken breast i was having and the calamari Ryan was having.

I have then come across this recipe for Brown Rice and Avocado Salad.

I have used one cup of Brown Rice and Quinoa and boiled and simmered this in two cups of water.

While the rice was cooking i have lightly toasted two tablespoons of pepitas and almonds and one tablespoon of pistashio kernels. I have added these to a large bowl.

Next i have shredded to zucchinis and cut up three spring onions and added these to the same bowl as the nuts. Once the rice has simmered down i have then added this the bowl and mixed to combine.

I have combined the oil, honey and lemon juice in a jug and then stirred this through the rice mixture and added a little cracked pepper.

We have then cooked up the chicken and calamari in very hot pans until cooked through.

I have placed two spoonfuls of the rice mixture on the plate and topped with a sprinkle of mint and then the meat.
