A belated Happy New Year to you all.

But now back to the important things. Food and cooking!

So what have i created in the last few days?

For new years eve we have made a delicious potato rosti with steak and i have made a red wine sauce to serve with it.

Combining onion, garlic and butter i have sauted these. I have then added 1/2 cup wine and 1 cup of beef stock and allowed this to boil.

This sauce thickens on standing.

On New Years Day breakfast was bacon, eggs and homemade Hashbrowns.

To make these hashbrowns i have combined two roasted potatoes, grated, grated cheese, flour and eggs.

I have then placed spoonfuls of this into an oiled pan and cooked until browned.

 

Lastly, dinner tonight was something new, Quinoa Crumbed Chicken.

I have used two chicken breasts and have sliced these into three.

I have combined 1 1/2 cups quinoa flakes, parmesan, lemon thyme leaves, garlic and salt and pepper on a plate.

I have then coated each piece of chicken in flour and then egg and then quinoa flake mixture. I have shallowed fried these until golden brown.

Served these with salad and lemon slices.
