Tonight i have decided to make risotto. A good friend of mine decided to share her amazing recipe.

So i am here to share it with you.

Chicken Breast, cut into strips – I used 2 small breast

Chicken Stock – I used a 500ml carton of vegetable stock, plus 1/4 cup of water

Basil Pesto

Avocado

Parmesan or Tasty Cheese – I used about 1 handful of tasty cheese in the risotto and a sprinkle of parmesan on top

Aborio Rice – 1 cup and spillage

1 Onion, diced

Garlic – i used two heaped teaspoons

Olive Oil

Directions are – Heat pan, add a little oil, add chicken and heat through but not brown – medium heat. Remove chicken and add onion, garlic and a bit more oil – medium heat – about 2-3 minutes.

Add a bit more oil and add rice – coat the rice with oil and onion mix and toast rice for about 3 mins. Need to stir regularly but not constantly.

Add enough stock to coat the bottom of the pan and stir through. Stir regularly. Once stock is absorbed add more. Continue with this until rice is soft.

Add about 2 teaspoons (or to taste) of pesto and stir.

Add chicken and cheese – salt & pepper to taste.

Serve with more cheese and cut avocado.
