Tuesday 12th June 2018 – Taco Tuesday and a Cream Cream Frosting
Dinner for tonight was something different, Taco Pie.
With left over mashed potato from last week, i needed something delish to use it up. Added to the already mashed potato 2 tablespoons Taco Seasoning. Then spread the mixture over the sides and base of a pie pan. Baked for 20 minutes to get the potato golden.
Whilst the base is in the oven, i have prepared the beef mince and onion until cooked and brown, added the remaining pack of Taco Seasoning and 1/2 cup salsa.
Added this to the pie dish on top of the potato base. Baked for 15 minutes at 200 degrees with the fan.
Served this up with grated cheese, sour cream and salad.
Earlier today i made a Cream Cheese Frosting to go on top of a Chocolate Sourdough Cake a friend bought around.
Last night i quickly made a chocolate icing, too runny and no the right consistency for the denseness of the cake. So today i whipped up the cream cheese frosting and frosted the cake, minus the 2 slices we ate last night.
60 grams cream cheese, straight from the fridge, cut into small chunks, 30 grams buttery nutlex, 1/2 cup icing sugar and 1/2 teaspoon vanilla essence. I have added all of these into a Tupperware Extra Chef and whipped until creamy.
