Vegetable Soup and Bowtie Pasta with Chorizo
After a day of not feeling 100% best way to feel better is to make soup.
So yesterday i made a delicious vegetable soup.
Roughly dicing 3 carrots, 3 stalks celery, 1 potato, 1 parsnip, 1 turnip, 1 onion, 1 leek, 1/2 cup corn and 1/2 cup peas. I have added these into a large pot.
I have then added 4 cups of water and 2 packets of creamy chicken and corn soup.
I have then brought this to the boil and then simmered for 30 minutes until the vegetables are tender.
Next dinner yesterday, pizza.
So i cheated a used premade pizza bases. Using 2 little bases, i have coated these with tomato paste. Added some shredded cheese.
Then i have sliced some left of lamb from the other night and placed this on top. Added some grean capsicum and topped off with more cheese.
I have cooked these for about 15 minutes.
Dinner tonight, something different. Bowtie Pasta with Chorizo.
I have cooked 2 1/2 cups Penne pasta in salted water, i have added 1/2 cup broccoli florets to the water 1-2 minutes before tipping out the water.
I have pan-fried 250g chorizo in 2 tablespoons of olive oil until browned. I have then added 1 diced red capsicum and 1 diced brown onion and cooked this until soft.
I have then added 2 teaspoons of garlic. Next i have added 1 1/2 tablespoons lemon juice (i did not have any lemon zest), 1/2 cup chicken stock, the cooked pasta and broccoli, 50g dill, yoghurt and feta dip, and a hand full of tasty cheese.
I have mixed this all together until combined. I have served this with parmesan cheese and cracked black pepper.
