So tonight i have made Sweet Potato Cakes for dinner to accompany my steak and salad.

To make these i have used half a grated sweet potato, 1 teaspoon crushed garlic, 1/2 teaspoon each of tarragon and parsley, salt and pepper, 4 egg yolks and 1 tablespoon each of plain flour and rice flour. I forgot the onion.

I have combined these ingredients in a bowl and then shallow fried these in a skillet with olive oil until browned.

I have then drained these on a paper towel.

This morning i have made a belated Australia Day Pavlova.

Using my favourite Margaret Fulton’s Pavlova recipe.

I have whisked the egg whites in my mixer until stiff, i have then added the caster sugar a 1/4 cup at a time until very stiff and peaks form and do not fall.

I have then added the remainder of the ingredients and mixed to combine.

I have piled the mixture onto a silicon mat on a baking tray and then placed in the cool oven for 1 1/2 hours.

Once cooled i have topped with whipped cream, mango, strawberries and honey comb chocolate.

Last week i have made Salt and Pepper Chicken/ Prawns.

So for this i have used 1 chicken breast cut into strips and 300g of prawns.

In two zip lock bags i have added the cornflour, salt and pepper and then the prawns in one of the bags and the chicken in the other. I have sealed and then shook the bags to coat the meat.

In two small frypans i have added 1/4 cup of olive oil to each. Once hot i have added the coated meat and cooked until golden on each side. Approx 4 minutes.

I have then drained these on a paper towel before serving.

I have served these with beef flavoured rice.

For this i have combined 2 cups of rice with 2 cups of beef stock and 1/2 cup water and cooked these in a rice cooker until ready.
