- 2 Wholemeal Mountain Bread Wraps
- 4 slices Haloumi
- 1 cup Baby Spinach
- 4 Eggs
- Salt and Pepper to taste

Instructions
- Preheat oven to 180C.
- Spray the inside of 1 cup ramekins (1 per serve) with cooking oil spray and cut a slice of Mountain Bread into quarters (per serve). Dice haloumi and whisk eggs.
- Gently press two squares of Mountain Bread into each ramekin. Divide spinach and diced haloumi into cups then top with whisked egg.
- Bake for approx 15 minutes until puffed and golden. Season with salt and pepper before serving.
