  1. Place Cashew Nuts, drained Chick Peas, reserved liquid, lemon juice and coriander into a food processor and puree until combine and left a little chunky.
  2. Spoon mixture into a serving dish, drizzle with a little olive oil and sprinkle with extra chopped cashews.
Recipe Notes

Almonds or macadamia nuts can be subsituted for the cashew nuts. A little extra lemon juice can be added for extra zing. Add lime juice to the mix to make more flavour.
