Ingredients
- ½ cup Cashew Nuts or Almonds, roasted
- 400 grams Chickpeas drain and reserve 5 tablespoons liquid
- 2 tablespoons Lemon Juice
- 1 tablespoon Coriander chopped fresh
- Olive Oil for serving
- Cashew Nuts chopped for garnish

Instructions
- Place Cashew Nuts, drained Chick Peas, reserved liquid, lemon juice and coriander into a food processor and puree until combine and left a little chunky.
- Spoon mixture into a serving dish, drizzle with a little olive oil and sprinkle with extra chopped cashews.
Recipe Notes
Almonds or macadamia nuts can be subsituted for the cashew nuts. A little extra lemon juice can be added for extra zing. Add lime juice to the mix to make more flavour.
