  1. Heat oil in a large pan over medium heat. Add onion and salt. Cook, stirring occasionally, for 10-12 minutes, or until light golden and caramelised. Set aside to cool.
  2. Once cool, place the onions, sour cream, vinegar and chives in a bowl, stir to combine and season to taste with sea salt and freshly ground black pepper.
