Ingredients
- 1/4 cup Vanilla Almond Milk unsweetened
- 70 grams Butter
- 1 teaspoon Vanilla Extract
- 3/4 cup Xylitol or sweetener of choice, or sugar see note
- 1 1/4 cups Self Raising Flour sifted
- 1/2 cup Espresso Coffee fresh brewed , cooled
- 1/4 cup Dutch Cocoa Powder

Instructions
- Place milk & butter in a microwave proof dish & heat for 1 min or until butter is melted.
- Add vanilla, sweetener, sifted s/r flour, coffee & cocoa powder & stir to combine.
- Pour mix into oil sprayed small ramekins that fit into a steamer ( makes 14 small puddings). I use Tupperware microwave small ramekins.
- Place ramekins inside a steamer ( I use a Tupperware steamer) you can also use a stove top steamer or the Thermomix varoma steamer, but in my Tupperware steamer in the microwave for 12 minutes, is all it takes to cook, the Center should be soft but cooked through.
- Rest for a minute once cooked and then turn out onto a plate.
- These also reheat well, and freeze well.
