- 2 cups Plain Flour
- ¼ cup Cocoa Powder
- 3 teaspoons Baking Powder
- ¼ cup Caster Sugar
- ¼ cup Brown Sugar packed
- ¼ cup Buttermilk
- ¾ cup Apple Sauce Unsweetened
- 1 tablespoon Olive Oil
- 1 tablespoon Golden Syrup
- 1 teaspoon Vanilla Essence
- 1/3 cup Chocolate Chips

- Preheat oven to 180°C. Grease four 12-hole mini muffin pans or line with paper cases.
- Sift flour, cocoa and baking powder into a bowl. Stir in the caster sugar and brown sugar. Make a well in the centre.
- Combine buttermilk, apple sauce, oil, golden syrup and vanilla in a jug. Gently fold into the flour mixture until just combined. Stir in half the choc bits. Divide the mixture evenly between muffin pan holes or cases until about three-quarters full. Sprinkle over remaining choc bits.
- Bake for 10-12 minutes, or until a skewer inserted into the centres comes out clean. Stand muffins in the pan for 5 minutes to cool slightly. Serve warm.
