  1. Combine the cabbage, carrot and sprouts. Take the dried rice paper wrapped and, working with one at a time, soak them in hot water until they are softened.
  2. Place the wrapper onto a work surface and place some of the vegetables and some fresh mint sprigs into the corner. Fold over the base and roll up completely to secure.
  3. Repeat with remaining vegetables, wrappers and more mint leaves. Cover and chill until serving time.
Recipe Notes

Arrange on a platter and serve with sweet chilli and soy dipping sauces.
