Ingredients
- 1 Spring Onions thinly sliced
- 2 tablespoons Olive Oil divided
- 2 tablespoons Raspberry Vinegar
- 1 tablespoon Parsley finely chopped
- 1/2 teaspoon Salt divided
- 1/4 teaspoon Black Pepper Ground, divided
- 4 Apricots halved, pits removed
- 2 Filets Mignons about 2cm thick (115-g)
- 140 grams Baby Rocket or spinach leaves
- 3 tablespoons Blue Cheese crumbled , optional

Instructions
- Prepare barbecue for grilling, preheat gas grill or heat grill pan over medium heat.
- Whisk spring onion, 1 tbs of the oil, vinegar, parsley, tsp of the salt and tsp of the pepper in a large bowl; set aside.
- Brush cut surface of apricots lightly with remaining olive oil. Season beef with remaining salt and pepper.
- Grill beef and apricots, cut side down. Cook apricots until soft, about 6 minutes. Turn beef midway, 8 minutes for medium-rare or longer if desired. Remove from heat; let stand for 5 minutes. Slice apricots.
- Thinly slice beef against the grain.
- Toss rocket with dressing in a medium bowl. Transfer to 4 serving plates. Top salad with slices
- of beef and 2 sliced apricot halves. Sprinkle with blue cheese, if desired.
