  1. Prepare barbecue for grilling, preheat gas grill or heat grill pan over medium heat.
  2. Whisk spring onion, 1 tbs of the oil, vinegar, parsley, tsp of the salt and tsp of the pepper in a large bowl; set aside.
  3. Brush cut surface of apricots lightly with remaining olive oil. Season beef with remaining salt and pepper.
  4. Grill beef and apricots, cut side down. Cook apricots until soft, about 6 minutes. Turn beef midway, 8 minutes for medium-rare or longer if desired. Remove from heat; let stand for 5 minutes. Slice apricots.
  5. Thinly slice beef against the grain.
  6. Toss rocket with dressing in a medium bowl. Transfer to 4 serving plates. Top salad with slices
  7. of beef and 2 sliced apricot halves. Sprinkle with blue cheese, if desired.
