- 1 Carrot
- 2 Zucchini

- ½ cup Plain Flour

Instructions
- Grate potato, carrot and zucchini into bowl.
- Add egg, salt and pepper mix well.
- Slowly add flour to bowl to create batter mixture.
- Heat 4 tablespoons of oil in a frying pan over medium-high heat, use 1 heaped tablespoon of mixture per fritter.
- Cook 4 fritters for 3 minutes on each side or until golden brown. Repeat process.
