  1. Preheat you oven at 180 degrees C. In a bowl whisk eggs with salt and pepper. Add your diced ham and onion, along with the potato. Mix.
  2. Grease a non stick dish with oil, add your mixture to the dish. Making sure it is quite thin but there are no gaps. Bake for about 15-20 minutes.
  3. Once cooked let it sit for about 2-3 minutes before removing from the dish.
  4. Slide onto a chopping board, slice into strips with a sharp knife, roll and secure with a tooth pick.
Recipe Notes

These will last 3 days in an airtight container in the fridge.

You can pop them into the microwave for 30 seconds to reheat, otherwise they are yummy cold.

Allow them to cool completely before popping them into a container to avoid condensation.
