  1. Preheat oven to 190c. Put potatoes on an ovel tray and bake for 1 hour or until soft. Halve, then scoop out flesh, keeping 4 mm on skins and reversing remainder for use elsewhere. Cut potato into bite-sized pieces.
  2. Toss potato in oil, then season. Put on wire racks set over oven trays and bake for 30 minutes or until golden. Sprinkle with salt and pepper and serve.
