- 1 cup Plain Flour
- 1/2 cup Brown Sugar
- 1 teaspoon Cinnamon
- 1/2 teaspoon Mixed Spice
- 75 grams Unsalted Butter
- 1/4 cup Golden Syrup

Instructions
- Line two baking trays with non-stick baking paper.
- Sift flour, sugar and spices into a large bowl. Using fingertips, rub in butter until mixture resembles coarse breadcrumbs. Add golden syrup and mix to form a soft dough. Turn onto a lightly floured surface and knead for 1-2 minutes, until dough is smooth. Cover with plastic wrap and chill for 30 minutes.
- Preheat oven to 180c or 160c fan forced. Roll dough on a lightly floured surface until 5 mm thick. Using cookie cutters, cut shapes from dough. Place on prepared trays, allowing room for spreading. Chill for 10 minutes.
- Bake for 10 minutes, until pale golden. Cool on trays. Store in an airtight container. Decorate with writing fudge, or chocolate, just before serving.
