- 25-30 Crackers
- 1 cup Plain Flour
- 1 teaspoon Bi Carbonate of Soda
- ¼ teaspoon Salt
- ½ cup Unsalted Butter softened
- 1 cup Peanut Butter
- 1 cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1 cup Rolled Oats
- 1 ½ cups Raspberry Jam

Instructions
- Preheat oven to 375 degrees F. Next, line a 9 x 13 baking pan with foil, then spray with cooking spray. Then, line the bottom of the pan with Crackers, you can break them in half if necessary.
- In a large bowl add cream butter, peanut butter, and brown sugar together until smooth, about 3 minutes (using hand mixer). Add in egg and vanilla, mix until combined.
- In a smaller bowl whisk together flour, bi carbonate of soda, and salt. Slowly incorporate flour into butter mixture (in thirds) until combined. Stir in the oats.
- Set aside 1 cup of dough, chill.
- With the remaining dough, top the Crackers, working in thirds until crackers are covered. Chill for 30 min.
- Cover with jam smooth over dough evenly. Take remaining dough and crumble into pea sized pieces and sprinkle over jam.
- Bake for 20-25 minutes or until dough is set.
