  • 600–800g cooked chicken, shredded or chopped
  • 1 onion, finely diced

  • 2 tablespoons butter

  • 1½ cups chicken stock
  • 1 teaspoon chicken stock powder (optional)
  • 1 teaspoon Italian herbs
  • ½ teaspoon paprika
  • Freshly cracked black pepper
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • ½ cup sour cream
  • ½ cup Greek yoghurt

Optional extras

  • Baby spinach

Method

  1. Add the butter, olive oil, onion, garlic, chicken stock, stock powder (if using), Italian herbs, paprika, black pepper, Parmesan and Dijon mustard to the slow cooker.
  2. Stir everything together before adding the cooked chicken.
  3. Cook on Low for 2–3 hours. Because the chicken is already cooked, this step is all about allowing the flavours to develop.
  4. During the last 20–30 minutes, stir through the sour cream and Greek yoghurt. Keep the slow cooker on Low and avoid boiling once the dairy has been added to keep the sauce smooth and creamy.
  5. Taste and season if needed. Add a little extra Parmesan if you’d like an even richer sauce.
  6. Stir through spinach or peas just before serving if using.
