Ingredients
- 1 package Hash Brown Potatoes
- 2 Eggs lightly beaten
- 4 tablespoons Plain Flour
- 1 Spring Onions coarsely chopped
- 2 Ham Slices chopped into small pieces (1 cup)
- 1 cup Mozzarella Cheese shredded
- 1/2 cup Parmesan Cheese grated
- Salt and Black Pepper to taste
- 12 Eggs scrambled
- Chives for Garnish

Instructions
- Preheat the oven to 205 degrees c.
- Lightly spray a 12 cup muffin tin with non-stick cooking spray.
- Mix the first eight ingredients together in a large bowl. Spoon potato mixture into each prepared muffin cup until about 1/3 cup full.
- Gently press the potato mixture to the middle and up the sides of each cup.
- Bake until golden brown, about 25-30 minutes. If the nests have puffed up to much in the centre, scoop out a little with a teaspoon.
- Spoon a few tablespoons of scrambled eggs into each nest and top with chives.
