Ingredients
- Leftover Chicken Afritada and Veg about 2 marylands would suffice
- 1 Red Onion finely diced
- 5 Tomatoes roughly chopped to 1 cm dice
- 1 bunch Coriander washed, roughly chopped
- 2 Birds Eye Chilli (optional), roughly chopped
- 12 Tortilla Wrappers warmed in oven
- 1/2 cup Sour Cream
- 1/2 cup Cheddar Cheese shredded

Instructions
- Strip the chicken, using a fork to scrape the meat off the bone, then set aside.
- Strain the sauce from the leftover vegetables and lightly mash.
- Mix the vegies and chicken together, then set aside.
- In a separate bowl, mix the onion, tomatoes, coriander and chilli to make a salsa.
- Place the chicken in a wrapper, topped with a little salsa, sour cream and shredded cheddar and roll like a big spring roll.
