  1. Preheat oven to 175C. Place potatoes, 100 ml olive oil, bay leaves and pinch salt and pepper in a roasting tray and cook in oven for 5 minutes.
  2. Mix together in a large bowl; breadcrumbs, cheese, marjoram, almond flakes and place on a flat tray and set aside.
  3. Whisk together eggs and milk, place in a deep dish. Place flour on a separate flat tray.
  4. Place each breast on floured tray and roll so as each is coated, pick up and place in egg/ milk mix and coat, place in breadcrumb/ cheese mix, again coat completely. Repeat for all chicken.
