- 1 package Hashbrowns shredded
- 2 Eggs
- 2 tablespoons Flour
- 1/2 cups Panko Breadcrumbs
- 1/2 cup Sharp Cheddar Cheese finely shredded
- 1 cup Pulled Pork finely chopped seasoned and lightly sauced

Instructions
- Mix potatoes, egg, flour, Panko and cheese together in a bowl.
- Form a flat potato patty - top with 2 tablespoons pulled pork. Form into a closed small egg shape making sure the potato mixture completely encases the pork.
- Deep fry in canola oil for 6-7 minutes each turning often. Depending on your size of tater tots this can take a couple of extra minutes.
- Remove from oil when the tots are a deep golden brown.
- Season with your favourite BBQ rub and serve with BBQ sauce or ketchup
