- 1 kg Chat Potatoes, Baby
- 2 tablespoons Oil
- 1 teaspoon Salt and Pepper
- 1 Red Onion halved and sliced
- 1 Lemon Juice and Zest
- 2 tablespoons Honey
- 500 grams Chicken Breast Fillet trimmed
- 1 teaspoon Oregano Leaves
- 1 teaspoon Paprika
- 1 teaspoon Garlic Granules
- 1/2 teaspoon Rosemary Leaves
- 1 teaspoon Thyme Leaves
- 1 teaspoon Coriander Seeds ground

Instructions
- Preheat oven to 210c. Line a large baking tray with baking paper.
- Add potatoes, 1 1/2 tablespoons oil, oregano, paprika, half of the garlic, rosemary, salt and pepper in a large bowl and mix well. Spread coated potatoes onto tray and bake for 30 minutes. Add onion to the bowl, toss to coat and set aside.
- Combine all remaining ingredients in a second bowl and toss to coat chicken.
- Place chicken fillets on baking tray with potatoes and scatter chicken with onions.
- Reduce temperature to 180c return tray to oven and cook for a further 20-25 minutes until chicken is tender and potatoes golden brown.
- Serve roasted chicken and potatoes with steamed greens and salad.
