Ingredients
- 80 grams Butter melted
- 250 grams Sweetened Condensed Milk 3/4 cup
- 250 grams Plain Sweet Biscuits like Marie biscuits
- 90 grams Desiccated Coconut 1 cup
- 1 Lemon juiced
- 1 Lemon zested
For the Lemon Frosting:
- 360 grams Icing Sugar
- 90 grams Butter softened to room temperature
- 5 tablespoons Lemon Juice
- 3 tablespoons Desiccated Coconut
- 3 tablespoons Desiccated Coconut

Instructions
- Grease and line a 22cm X 32cm rectangular slice tin with baking paper.
- Crush biscuits and place into a bowl.
- Add coconut and grated lemon rind.
- Mix to combine.
- Add melted butter, condensed milk and lemon juice to the biscuit mixture.
- Mix thoroughly until well combined.
- Press into the prepared tin.
- Place into the fridge.
- In a bowl, whisk the icing sugar, room temperature butter and lemon juice in a bowl until creamy and 'frosting-like' - if the frosting is too thick to spread, add a little more lemon juice.
- Spread the frosting over the slice, sprinkle with the extra coconut and place back into the fridge to set completely.
- Cut into slices.
- Store in an airtight container in the fridge for up to 1 week.

TIPS FOR FREEZING SLICES
- you can freeze the slices as a whole or cut into individual pieces;
- wrap the slice in plastic wrap then wrap in a layer of foil and place into an airtight container in the freezer (these 3 steps will keep your slices tasting great!);
- slices with a soft filling (or cheesecakes) don’t tend to freeze well;
- slices kept in the freezer will taste best within the first month, but can last longer.
