Ingredients
- 2 teaspoons Gelatine Powder
- 1/4 cup Water Boiling
- 2 Calypso Mangoes plus extra to garnish
- 1/2 cup Caster Sugar
- 2 Lime rind finely grated and juiced
- 300 ml Cream thickened, whipped
- Sponge Finger Biscuits to serve

Instructions
- Add gelatine to boiling water and whisk with a fork until dissolved. Set aside to cool.
- Cut cheeks from either side of the mango stones and scoop flesh from skin with a large spoon. Roughly chop and place into a food processor. Add sugar and lime rind and juice. Process until smooth.
- With blender running, add cooled gelatine and process for 30 seconds. Gently fold in cream and spoon into glasses or bowls. Chill until set. You may like to top with some extra mango and serve with sponge fingers.
