  1. Divide potatoes into 4 portions and wrap each in a double thickness of foil. Cook, buried in coals, for about 30 mins, or until tender. Set aside for the next morning.
  2. Chop potatoes into bite-sized pieces. Heat oil in a frying pan and cook potatoes over medium-high heat for about 10 mins, or until browned. Transfer to a plate. Add bacon, mushrooms and tomatoes to the pan and cook for about 5 mins, or until bacon is brown and vegetables are tender.
  3. Return potatoes to the pan and fold through until combined. Make 4 evenly spaced cavities in the mixture. Place over medium heat and break an egg into each cavity. Place a lid (or heatproof tray) over the pan and cook for 3-4 mins, or until the egg has set
