Plum Beef Stir-fry

Instructions
  1. Place beef in a medium bowl with 2 tblsps each plum, soy and sweet chilli sauces. Toss to coat. Set aside.
  2. Place noodles in a large heatproof bowl. Cover with boiling water. Stand for 5 minutes. Separate noodles with a fork. Drain.
  3. Boil, steam, or microwave broccolini until tender. Drain.
  4. Heat half the oil in a hot wok. Add capsicum, carrot and garlic. Stir-fry vegetables until carrot is almost tender. Remove from wok.
  5. Heat remaining oil in same hot wok. Add beef in two batches. Stir-fry until beef is browned and cooked through.
  6. Return beef and vegetables to wok with noodles, broccolini, half the spring onions and remaining sauces. Stir-fry until hot.
  7. Serve stir-fry topped with remaining spring onions.
