Roast Pork with Hazelnut Apple Wedges

  1. Preheat oven to 250. Remove pork from packaging and pat dry with paper towel. Score rind using a sharp knife or cutting blade. Rub all over with oil then combine salt, mustard powder and ginger and rub well into cuts in the rind. Spray wtih oil spray.
  2. Calculate cooking time allowing 40 minutes per kilo. Place into roasting pan and cook for 30 minutes. Reduce heat to 200 and continue cooking until done when tested.
  3. Meanwhile prepare apples, quarter apples, remove core and cut each piece into two wedges. Place hazel meal onto a small plate. Brush apple wedges with butter and press one side into the hazel meal to coat. Add to roasting pan with pork for the last 30 minutes of the cooking time.
  4. Remove pork from oven and cover with foil for 10 minutes before slicing. Remove string, slice pork and serve with apple wedges.
