- 1 Avocado halved, seeded, peeled and diced
- 1/2 cup Corn Kernels
- 1/2 cup Strawberries quartered
- 2 tablespoons Coriander Leaves chopped
- 2 tablespoons Pine Nuts

- 1/4 cup Olive Oil
- 1/4 cup Apple Cider Vinegar
- 1 Lime zested
- 2 tablespoons Lime Juice freshly squeezed
- 2 tablespoons Sugar

Instructions
- To make the vinaigrette, whisk together olive oil, apple cider vinegar, lime and sugar in a small bowl; set aside.
- In a medium saucepan, cook couscous according to package instructions.
- In a large bowl, combine cous cous, avocado, corn, strawberries, coriander and pine nuts. Stir in lime vinaigrette.
- Serve immediately.
