- 1/2 cup Honey
- 1/4 cup Butter
- 1/4 cup Brown Sugar
- 1 1/2 cups Plain Flour
- 1/2 teaspoon Bi Carbonate of Soda
- 1 teaspoon Ginger ground
- 1/2 teaspoon Mixed Spice
- 1/4 teaspoon Cloves ground
- 1 tablespoon Milk
Icing
- 1 1/2 cups Icing Sugar
- 1– 2 tablespoons Milk
- Food Colouring

Instructions
- In a saucepan over low heat, combine butter, honey and sugar, stirring until melted.
- Once butter mix has melted, increase heat and bring to the boil. Remove from heat.
- Sift flour, ginger, mixed spice, cloves and bicarb soda into butter mix. Add milk and mix well.
- Set mixture aside to cool and thicken for approx 1 hour.
- Preheat oven to 180°c and line 2 flat baking trays with baking paper.
- Knead dough on a lightly floured surface and divide into four even sections.
- Roll each piece into a log shape around 25 cm long. Cut the log into 5cm sized pieces and gently flatten and shape into an oval shape and place on tray. Repeat until you have used all dough.
- Bake for around 10 minutes remembering biscuits will be harder when cooled.
- Mix icing sugar, milk and food together and ice the biscuits once cool.
