There are two kinds of leftover dinners.

The first is where everyone politely eats what’s in front of them because it’s already in the fridge.

The second is the kind that has everyone asking, “Can we make this again next week?”

This Sticky Pork & Super Slaw Noodles recipe definitely falls into the second category.

I found myself with a bag of super slaw that was nearing its use-by date and some sliced roast pork tucked away in the freezer from Christmas leftovers. Rather than letting either go to waste, I threw together a quick stir-fry with a simple sticky sauce, and honestly, I think it tasted even better than the original roast!

The best part? It’s on the table in around 20 minutes, uses everyday ingredients, and is incredibly easy to adapt depending on what’s hiding in your fridge.

Ingredients

  • 300–400g leftover roast pork, sliced into thin strips
  • 1 bag Super Slaw
  • 1 packet Hokkien noodles (or your favourite noodles)
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil

Sticky Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon sweet chilli sauce
  • 1 tablespoon honey
  • 1 teaspoon vinegar (rice wine, apple cider or white vinegar)
  • 1 teaspoon grated fresh ginger (optional)

Method

  1. Cook the noodles according to the packet directions and set aside.
  2. Heat the oil in a large frying pan or wok over high heat.
  3. Add the garlic and cook for about 30 seconds until fragrant.
  4. Add the sliced roast pork and leave it undisturbed for a minute or two so it develops some lovely golden edges.
  5. Stir in the sticky sauce and cook for another minute until everything is coated.
  6. Add the super slaw and stir-fry for 2–3 minutes. You want the vegetables to soften slightly while still keeping some crunch.
  7. Toss through the cooked noodles until everything is coated in the sauce.
  8. Serve immediately.

Optional Extras

This recipe is incredibly forgiving. If you’ve got any of these in the fridge or pantry, they’ll fit right in:

  • Spring onions
  • Sliced capsicum
  • Frozen peas or corn
  • Crushed peanuts or cashews
  • Sesame seeds
  • A fried egg on top
  • A squeeze of fresh lime
