Last night was dumpling night and on the menu was pineapple fried rice, chicken dumplings and apple turnovers.
First. Gyoza Japanese Dumplings
In these I have used chicken mince, half a leek, a grated carrot, grated ginger, garlic, water chestnuts, soy sauce and sesame oil.
We have steamed half the dumplings and fried the other half.
Have then served these with fried rice and prawn crackers.
Next was Apple Turnovers for dessert.
For these i have peeled and cut 400 grams of apples and boiled them in 1 1/2 cups of water. I have added the sugar and allowed the apples to boil until soft. Once soft i have drained the apples and then added the walnuts.
I have cut four circles out of the pastry and smeared the quince paste on one half of the circle and then topped with the filling mixture and folded over. Brushed with a little butter and topped with cinnamon sugar. Baked for 20 minutes and served with icecream. Delicious.
Today i started the day by making a different breakfast of Carrot Cake Waffles.

I have combined three little tubs of Philly cream cheese together with 2 tablespoons of maple syrup and the walnuts and this has been enough for the six waffles this recipe made with the waffle iron i own.
Next i had oats and bananas to use up and came across this recipe today, Two Ingredient Cookies.

So this one i used three small bananas and oats.
I have mixed in a teaspoon of cinnamon and half a cup of white chocolate and rolled into balls and baked for 15 minutes. They taste amazing.
Another i have cooked up is Shortbread Biscuits.

This recipe makes a large batch and also is able to be kept in the fridge for a few months.
All i have done today was slice these up and topped each with a white chocolate button and baked them for 15 minutes.
Tonight’s dinner was what i had scheduled for Thursday night’s dinner. Chicken in Peanut Sauce.

So easy and all made in the microwave. Follow the recipe exactly and it turns out every time.
You can use chicken breast if you want but breast usually dries out quicker than thigh.
And that is another weekend of baking done again.
