  1. Preheat oven to 170c fan forced. Grease a 20 cm x 30 cm lamington pan with cooking oil spray and line with baking paper.
  2. Combine butter and chocolate in a medium saucepan' stir over low heat until chocolate is melted. Spoon melted chocolate into a 3 litre mixing bowl. Add brown sugar, eggs, vanilla, flour, sour cream and nuts and beat with an electric mixer until well combined. Spread mixture into prepared pan.
  3. Bake for 30 minutes or until brownie feels slightly firm to touch in centre. A skewer inserted will come out with slightly moist crumbs attached. The brownies will also form a crust on top.
  4. Allow to cool and slice into squares. Store in an airtight container.
