Cook the Chicken:
  1. Heat avocado oil in a large skillet over medium-high heat.
  2. Add diced chicken, season with salt, black pepper, and Italian seasoning, and cook for 5-6 minutes until golden brown. Remove from the skillet and set aside.
Sauté the Aromatics:
  1. In the same skillet, melt butter over medium heat.
  2. Add shallot and garlic, cooking for 1-2 minutes until fragrant.
Cook the Orzo:
  1. Stir in orzo and toast for 1 minute.
  2. Pour in chicken broth and bring to a simmer.
  3. Cook for 8-10 minutes, stirring occasionally, until the orzo is tender.
Add Broccoli & Chicken:
  1. Stir in broccoli florets and return the cooked chicken to the skillet.
  2. Cover and let cook for 3-4 minutes, until broccoli is tender.
Melt the Cheese & Serve:
  1. Stir in cheddar cheese until melted and creamy.
  2. Remove from heat and serve warm!
Recipe Notes

Pro Tip: Add a sprinkle of Parmesan cheese or red pepper flakes for extra flavour!
