- 4 Eggs at room temperature
- 8 slices Baguette
- Olive Oil to brush
- ¼ cup Maple Syrup
- 4 rashers Bacon rind removed
- 2 leaves Cos Lettuce, Baby trimmed, washed, outerremoved, halved
- ¼ cup Parmesan grated
- Caesar Salad Dressing

Instructions
- Preheat oven to 160c. Boil, cool and peel eggs.
- To make croutons, place baguette on an oven tray. Brush with oil. Bake in the oven for 10 minutes or until crisp.
- To cook bacon, place syrup and bacon in a bowl and toss to coat. Transfer to an oven tray lined with baking paper and bake for 15 minutes or until crisp.
- Halves eggs width wise. Divide eggs, croutons, lettuce and bacon among plates and arrange on plate. 5. Drizzle with dressing. Scatter with parmesan cheese.
